  2. Pour la crème d’amande : Mélanger le beurre très mou (sorti du frigo au moins 1h30 avant) avec le sucre glace et la pourpre d’amande. Quand l’ensemble est homogène ajouter les œufs un à un. Pour la crème pâtissière : Dans une casserole portez à ébullition le lait avec une demi gousse de vanille, retirer du feu et laisser infuser 15minutes.
  3. Fouettez dans un saladier les jaunes d’œufs avec le sucre jusqu’à ce que le mélange blanchisse. Ajouter la farine mélangez bien ensuite versez la moitié du lait mélangez à nouveau et verser le reste du lait. Portez à ébullitions 2 minutes sans cesser de remuer et laisser refroidir dans un plat à gratin Retourner la galette et personnellement je la laisse 1h au frigo avant de mettre du jaune d’œuf et mettre au four
  4. Pour la cuisson je la laisse cuire 40 minutes à 170 degrés
